I've only heard rumors of the legendary Nature Dungeon guardian. They say it protects itself with giant wooden walls, and can summon other plant-like enemies to aid it in battle. I've heard that the only way people have found to leave it vulnerable is by throwing something with a sharp point at it, such as a spear. If it were me, I would almost certainly want to also come equipped with an axe to chop it down.
